Ingredients
 

Base

  • cup oat flour process whole oats until resemble a flour/meal
  • cup coconut flour
  • 2 tablespoon rice malt syrup can sub maple syrup
  • 2 tablespoon coconut oil melted
  • 1 tbso cocoa

Coconut Filling

  • 1 ¼ cups shredded/dessicated coconut
  • ½ cup coconut milk
  • 2 tablespoon coconut oil
  • 2 tablespoon rice malt syrup can sub maple syrup

Chocolate Topping

  • 2 tablespoon cocoa
  • 4 tablespoon coconut oil melted
  • 2 tablespoon rice malt syrup sweeten to taste

Instructions
 

Base

  • Combine all ingredients together.
  • Line 8 muffin tins with parchment paper
  • Press base firmly into muffin tins

Coconut Filling

  • Combine all ingredients together in a large bowl
  • Spread evenly onto base layer
  • Freeze for 10 minutes

Chocolate Topping

  • Combine ingredients together
  • Spoon chocolate over coconut filling
  • Freeze until set

Serving

  • Remove bounty slices from parchment paper (they will look rustic)
  • Place in a sealed container in freezer until ready to eat.
