The perfect main course for a romantic dinner for two! This simple bucatini all'Amatriciana is absolutely gorgeous! A light and fresh pasta, meaning there is more time for dessert!!
Place brown onion, prosciutto, garlic and red pepper flakes in a blender, and blend until well combined (it will look mushy)
Heat 1 teaspoon of olive oil in a dutch oven or skillet over medium to high heat.
Add prosciutto mix and stir 3-5 minutes, until prosciutto starts to cook.
Add tomatoes and chicken stock. Simmer 15 to 20 minutes until sauce thickens
Meanwhile, make pasta according to packet instructions. Note 2
Serve pasta on a plate, top with amatriciana sauce. Serve with fresh parsley and parmesan cheese.
Notes
note 1 - if you can find it, half a red chilli (seeds removed) is preferable to red pepper flakes! note 2 - fresh pasta is better if you can find it. Cooking time will be around 4 to 5 minutes for fresh pasta.
