Romantic Dinner for Two - Bucatini all'Amatricia

The perfect main course for a romantic dinner for two! This simple bucatini all'Amatriciana is absolutely gorgeous! A light and fresh pasta, meaning there is more time for dessert!!

Ingredients
 

  • 1 brown onion 1 small, or half a medium size
  • 4 oz prosciutto
  • 2 garlic cloves
  • ½ teaspoon red pepper flakes note 1
  • 14.5 oz tomatoes canned
  • ½ cup chicken stock
  • 6 oz bucatini fresh is best
  • 1 teaspoon olive oil
  • ½ teaspoon pepper
  • ¼ teaspoon salt

Instructions
 

  • Place brown onion, prosciutto, garlic and red pepper flakes in a blender, and blend until well combined (it will look mushy)
  • Heat 1 teaspoon of olive oil in a dutch oven or skillet over medium to high heat.
  • Add prosciutto mix and stir 3-5 minutes, until prosciutto starts to cook. 
  • Add tomatoes and chicken stock. Simmer 15 to 20 minutes until sauce thickens
  • Meanwhile, make pasta according to packet instructions. Note 2 
  • Serve pasta on a plate, top with amatriciana sauce. Serve with fresh parsley and parmesan cheese. 

Notes

note 1 - if you can find it, half a red chilli (seeds removed) is preferable to red pepper flakes! 
note 2 - fresh pasta is better if you can find it. Cooking time will be around 4 to 5 minutes for fresh pasta.
