Hello! Apologies for the lack of posting lately, we have been absolutely flat out since arriving in Portland! We took the 8 hour road trip down on Saturday then Adam’s been at work and I’ve been running around like a crazy woman trying to find us a place to live!
So far we LOVE Portland! We have found so many cool places to see so far already, and the food and coffee is amazing!! I think we will be very happy living here for the next couple of months! Adam and I have been walking so much since being here. I’ve been walking to work with Adam in the morning (mainly for a coffee stop!) and then have been wandering all around the city and neighbourhoods. I reckon I’ve managed to trek about 20km in the last two days alone! It’s been a lot easier staying active here and we are definitely eating a lot better!
Because we are living in an Air Bnb for now, it has been a little tricky finding the space and utensils to cook, so our food has been pretty simple (which isn’t all bad!). Breakfasts in particular have been pretty stock standard. We’ve been making our easy breakfast parfait a fair bit over the last couple of days, just because it is so simple and doesn’t require any space or effort to make! It’s been a great breakfast as we have both been pretty much on the go since we got here! The best thing about this recipe, is that is can be made the night before, meaning you just grab and go in the morning! It’s also even more delicious because the oats become mushy and soft.
We have a few variations of our breakfast parfait that we make which we thought we would share with you today! This easy breakfast parfait, as the name suggests, is easy to make, versatile and great for busy, on the go people! We make it for both of us in two seperate containers the night before. It is perfect for a healthier option in the morning, that is refined sugar free and will fill you up until morning break time! Our favourite combination is usually frozen mix berries or raspberries, but you can add any fruit like banana, pomegranate, apple or pear.
Easy Breakfast Parfait
- 1/4 cup greek yogurt
- 1/4 cup oats
- 1 tbsp chia seeds
- 5 almonds
- 1/2 tbsp honey
- 1/4 cup mixed berries
- 1/4 tsp cinnamon
- In a jar, take away container or bowl, layer; yoghurt, LSA, chia, honey, oats, cinnamon & nutmet, then the almonds and berries and top with a little more honey.
