Dance the salsa! The chunky tomato avocado salsa to be precise!
I have developed a HUGE obsession for Mexican food since coming to America! It is just so damn tasty here compared to Australia! Everywhere we have been for Mexican food has been next level good! I am so keen to get to Mexico at some stage! Because if the food is this good in the States, I can only image what is is like in Mexico! We have definitely eaten a lot more Mexican inspired food since moving to the States, mainly in the form of tacos and breakfast burritos!
But the thing I LOVE about this food is how fresh everything is, AND how cheap the foods like limes and avocados are! Seriously! An avocado on a good day would be about $3 at the supermarket, and limes would be around about a $1 each back in Australia! Here they are less than a dollar! LESS THAN A DOLLAR PEOPLE!! (avocado & lime cheapness rant over).
With our new-found love for Mexican food, we’ve decided to make some more Mexican inspired recipes which showcase the beautiful produce, which is how our chunky tomato avocado salsa was born! I needed some sort of side for our zucchini sweet corn fritters, and was inspired by a bagel I had the other day made by a friend. The combination of fresh tomato, lime juice, cilantro avocado and the tanginess of raw red onion seemed to just make perfect sense!
Now I’m not even sure if this constitutes Mexican food, but I’m going to go with the flow and state it is! Every Mexican restaurant/food truck I’ve eaten at seemed to have some form of salsa served! So this is my take! I liked to be able to taste each element of the salsa, which is why I decided to go chunky! This salsa is meant to be a side to accompany some form of dish, however I found that when added to some spinach with some rice or quinoa, you easily have a simple and fresh salad as well! This was enough to serve two people as a side, but if you were making a meal out of it, I would add double the ingredients and just go for it!

Chunky Tomato Avocado Salsa
- 1 roma tomato , finely diced
- 1/2 avocado, diced
- 1/8 red onion, very finely diced
- 1 tsp lime juice
- 2 tbsp chopped cilantro/coriander
- salt and pepper to taste
- Place tomato, avocado, red onion and cilantro in a small bowl.
- Add a squeeze of lime and salt and pepper.
- Taste and adjust lime and seasoning accordingly.
