- 1 cup brown rice microwave packet is great!
- 1 chicken breast diced
- ½ cup frozen peas
- 2 slices of bacon diced
- ½ yellow/brown onion diced
- 2 eggs whisked
- 1 tablespoon coconut oil
- ½ tablespoon soy sauce for serving
- 2 green onions for serving
Heat coconut oil in a large fry pan over medium to high heat.
Add onion and cook 2 minutes or until starting to brown.
Add the chicken, and cook with onion for about 5 minutes or until browned.
Add bacon and stir through for 2 minutes.
Add whisked eggs and quickly stir the eggs through the mixture so that they scramble.
Microwave the rice according to packet instructions.
Add rice to chicken mix and stir until heated through.
Serve topped with generous lashing of soy sauce and shallots!
