Vanilla Chia Pudding

Ingredients
 

  • ΒΌ cup black chia seeds
  • 1 cup almond milk or sub coconut milk beverage or cows milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or sub maple syrup if vegan
  • yoghurt & fresh fruit to top in morning

Instructions
 

  • Place chia seeds in bowl/take away container/jar
  • In a jug, mix together almond milk, honey* and vanilla. Whisk until combined with a spoon.
  • Pour milk over chia seeds and stir for 2 minutes.
  • Place in fridge overnight.**
  • Top with yoghurt and fresh fruit in the morning

Notes

*I put my honey in the microwave for 10 seconds prior to adding it to the milk. I find it's easier to mix when it's runnier.
**After 30 minutes, stir your chia to ensure it is evenly set then place back in fridge.
