Fall Harvest Pizza

An easy pizza using some of my favourite fall produce. This fall harvest pizza is perfect for your next date night or girls night in!

Ingredients
 

  • 1 pizza base
  • ¼ green apple finely sliced
  • 1 cup arugula
  • 3 pieces prosciutto
  • ½ cup acorn squash diced
  • 1 tablespoon dried cranberries
  • 1 tablespoon pine nuts
  • ½ cup gouda grated
  • 2 teaspoon balsamic glaze

Instructions
 

  • Preheat oven to 400F/200C.
  • Dice squash and toss in olive oil and salted and pepper
  • Roast in oven 15 to 20 minutes until browned

Assemble pizza

  • Drizzle a little olive oil over the base.
  • Spread with half the cheese
  • Top with prosciutto, then add acorn squash and apple.
  • Sprinkle over pine nuts, cranberries and remaining cheese.
  • Bake in oven 15 to 20 minutes, or until the base is crispy and lightly browned
  • Top with arugula and a drizzle of balsamic glaze.

Notes

You can use any squash/pumpkin if you can't find acorn squash
