This watermelon mint feta salad is so good! Combing fresh summer flavours with the tanginess of red onion and balsamic, this is one good combination of ingredients.

Ingredients

  • 15 oz watermelon, cut into 1/2 inch or 1 cm cubes
  • 2 tbsp mint, finely sliced
  • 2 oz feta
  • 1/4 cup red onion, very finely sliced
  • 1 tbsp lime juice
  • 1 tbsp balsamic vinegar

Instructions

  • Place diced watermelon in a large bowl.
  • Top with mint, red onion and feta.
  • Squeeze lime juice over watermelon.
  • Just before serving, drizzle with balsamic vinegar.
