This tropical coconut chia pudding puts a fresh and tropical spin on your morning breakfast! Top with fresh summer fruits, you'll think you're in paradise!

Ingredients

  • 1/4 cup black chia seeds
  • 3/4 cup coconut milk
  • 1 tbsp honey
  • 1/2 cup mango, diced
  • 2 strawberries, quartered
  • 2 mint leaves, finely sliced

Instructions

  • Combine coconut milk, honey and chia seeds in a bowl and stir well.
  • Cover and leave to set 30 minutes.
  • After 30 minutes, stir chia pudding again.
  • Recover and leave 2 hours or overnight until nice and thick.
  • Top with mango, strawberry and mint leaves to serve.

Notes

* Can sub tinned coconut milk for coconut beverage, but use at least 1 cup of liquid.
** I put my honey in the microwave for 10 seconds before using to make it easier to pour and combine but BE CAREFUL as it can be hot and spit when it comes out of the microwave! We warned you! Prior experience!!
