A delicious, fun, fresh and simple taco recipe that's great for Cinco de Mayo celebrations, DIY taco bars, family gatherings or easy weeknight meals! These steak tacos with chipotle crema should definitely be on your list for summer entertaining!
2chipotle peppers in adobo+ 1 teaspoon of the adobo sauce
¼cupnatural yogurt/plain unflavoured yogurt
1tablespoonlime juice
Tacos
¼white onionfinely diced
¼cupcilantroroughly chopped
1jalapenosliced into rounds
¼cupqueso fresco
1limecut into wedges
8corn tortillas
Instructions
Steak
Finely slice steak and combine taco seasoning ingredients in a bowl.
Add steak and mix together with hands until steak is coated
Chipotle Cream
Roughly chop the chipotle peppers (or blend in a blender until smooth with a teaspoon of yogurt). Combine with yogurt and lime. Season and taste. Adjust if required.
Tacos
Heat a large skillet over medium to high heat and add a dash of olive or grapeseed oil. Cook steak for 5-10 minutes, until steak is cooked through. You want to avoid overcooked chewy steak, so 5-7 minutes is usually enough, 10 if you want well-done steak pieces.
At the same time, heat another skillet over medium to high heat and cook tortillas, one at a time for 2 minutes on each side.
Assembly
Add steak to tortilla, top with lime juice, jalapeno, cilantro, queso fresca and white onion. Drizzle over some of the chipotle crema and serve.
Notes
note 1 - flank steak can be expensive to find. However, you can use other steaks that can be thinly sliced such as skirt steak. So long as it's very thinly sliced.Nutrition is calculated for 8 single tacos, not 8 people.
