A versatile salad that is great for weekend gatherings, spring entertaining, backyard parties, picnics or everyday weeknight dinners. This honey mustard potato salad is light, fresh and healthy incorporating some beautiful spring produce. 


  • 1/2 lbs fingerling/chat/new potatoes, or the smallest potatoes you can find
  • 1/4 cup chives
  • 1 cup fresh peas , or frozen, cooked and rinsed
  • 3 cups arugula
  • 1 tbsp lemon juice
  • 1/4 cup dill
  • 1/4 cup mint
  • 1/3 cup Toby's Family Foods Honey Mustard Dressing



  • Preheat oven to 400F/200C.
  • Halve potatoes and place in a baking tray lined with parchment paper. Toss in a dash of olive oil and some salt and pepper. 
  • Roast 25 minutes, or until crispy. Remove from oven and cool while you make the rest of the salad. 


  • Place arugula in a salad bowl. Add peas, half the herbs and the slightly cooled potatoes. 
  • Add lemon juice and honey mustard dressing. Garnish with remaining herbs.
