or the smallest potatoes you can find

or frozen, cooked and rinsed

Instructions
Potatoes
Preheat oven to 400F/200C.
Halve potatoes and place in a baking tray lined with parchment paper. Toss in a dash of olive oil and some salt and pepper.
Roast 25 minutes, or until crispy. Remove from oven and cool while you make the rest of the salad.
Salad
Place arugula in a salad bowl. Add peas, half the herbs and the slightly cooled potatoes.
Add lemon juice and honey mustard dressing. Garnish with remaining herbs.
