Instructions
Cut the cauliflower into florets, and place in a steaming basket over a pot of water. Steam for 10 minutes, or until the cauliflower is soft.
Place butter, honey and rosemary in a small saucepan and heat until butter is melted and honey is runny.
Add the cauliflower to a high powered food processor with the honey butter, and salt and pepper. Tip - leave about a teaspoon of honey butter for serving (optional)
Process until the cauliflower is smooth and creamy.
Transfer to a bowl and serve with a crack of black pepper, a drizzle of honey butter and some extra rosemary.
