Ingredients
 

  • 1 cup brown rice microwave packet is great!
  • 1 chicken breast diced
  • ½ cup frozen peas
  • 2 slices of bacon diced
  • ½ yellow/brown onion diced
  • 2 eggs whisked
  • 1 tablespoon coconut oil
  • ½ tablespoon soy sauce for serving
  • 2 green onions for serving

Instructions
 

  • Heat coconut oil in a large fry pan over medium to high heat.
  • Add onion and cook 2 minutes or until starting to brown.
  • Add the chicken, and cook with onion for about 5 minutes or until browned.
  • Add bacon and stir through for 2 minutes.
  • Add whisked eggs and quickly stir the eggs through the mixture so that they scramble.
  • Microwave the rice according to packet instructions.
  • Add rice to chicken mix and stir until heated through.
  • Serve topped with generous lashing of soy sauce and shallots!
