No-Bake Salted Caramel Slice

This no-bake salted caramel slice is oh so rich and delicious! Combing the power of dates for the caramel, cocoa, and maple syrup on a light and fluffy raw nut base, it will be love at first bite!

Ingredients
 

Base

  • 2 tablespoon maple syrup
  • cup almond meal
  • cup coconut flour
  • 2 tablespoon coconut oil melted

Salted Caramel

  • 1 ½ cups medjool dates pips removed
  • 1 tablespoon almond butter
  • 1 ½ teaspoon salt
  • ¼ cup cold water
  • 1 tablespoon maple syrup

Chocolate topping

  • 3 tablespoon cocoa
  • 2 tablespoon maple syrup
  • 4 tablespoon coconut oil melted

Instructions
 

Base

  • In a large bowl, combine almond meal, coconut flour, maple syrup, and coconut oil and stir until well combined.
  • Line a loaf pan with baking paper.
  • Spread out base onto baking paper, using hands to gently knead the base into an even layer.

Salted Caramel

  • Combine dates, water, almond butter, salt (start with 1 teaspoon) and maple syrup into a high powdered blender.
  • Blend for 5 + minutes, or until dates become blended and smooth. You shouldn't be able to see any chunks of dates.**
  • Keep tasting and adding salt according to taste.
  • Spread salted caramel evenly over the base.
  • Freeze until hard - about 30 minutes.

Chocolate Layer

  • Combine cocoa, maple syrup, and coconut oil in a small bowl.
  • Apply evenly to salted caramel layer using a spoon.
  • Cut slice into thin pieces and enjoy!

Notes

* I used about 1 ½ teaspoons of salt, but adjust according to taste as you go.
** Date caramel needs to be really well blended to avoid chunky pieces. The blender will heat up as it blends the dates, so eventually you will have a nice, smooth and delicious date caramel. It just takes time!
