Sweet Potato Quinoa Burgers

These sweet potato quinoa burgers are bursting full of flavour. Packed full of goodness, these are a new lunch favourite.

Ingredients
 

  • 10.5 oz sweet potato about 1 medium sized
  • ¼ cup cooked quinoa
  • ¼ cup oats blitzed into a flour
  • 1 egg lightly beaten
  • 2 oz feta
  • 1 teaspoon cumin ground
  • 1 teaspoon cilantro ground
  • 3 teaspoon cilantro fresh, finely chopped
  • ½ tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions
 

  • Make oat flour - blitz ¼ cup of rolled oats in a high powered blender until oats resemble a fine flour
  • Preheat oven to 400F/200C
  • Dice sweet potato into 2 cm cubes
  • Toss sweet potato in olive oil, salt and pepper and lay out on a baking tray
  • Bake sweet potato for about 20 minutes, or until potato is tender and starting to get crispy
  • Place baked sweet potato in a large bowl and mash,
  • Add quinoa, oat flour, egg, cumin, ground cilantro, cilantro and feta and mix until well combined. Season well with salt and pepper.
  • Take about 1 large tablespoon of mixture and shape into round patties
  • Heat olive oil in a large pan and fry burgers about 2-3 minutes on each side until golden brown, flip and repeat process.
  • Serve with salads or in a wrap.

Notes

* Cooking time may vary. The cooking time of 30 minutes includes roasting the sweet potato, and the time taken to cook the burgers on a fry pan. If using the oven, cooking times goes up to 45 minutes
