Prosciutto and Butternut Squash Pizza

Crispy prosciutto and roasted butternut squash, this pizza is perfect for a fall pizza party, weeknight dinner or at-home date night dish!

- 5 oz butternut squash cut into round pieces, around 5-6 slices
- 1 tablespoon olive oil divided
- 3.5 oz prosciutto
- ½ cup cheddar cheese grated
- 1 cup arugula
- ¼ cup pine nuts
- ½ teaspoon pepper
- ½ teaspoon salt
- 1 10" pizza base store-bought or homemade
Preheat oven to 400F/200C.
Toss the butternut squash with ½ tablespoon olive oil and a pinch of salt and pepper.
Roast 15 minutes, until the butternut squash just starts to crisp up.
Remove from oven and start to assemble the rest of the pizza.
Roll out your pizza dough to fit a round or square baking tray.
Brush the base with the remaining ½ tablespoon of olive oil.
Sprinkle over the cheddar cheese, covering the entire base.
Top with the roasted butternut squash and add the prosciutto into the gaps.
Bake in your oven for 15-20 minutes, or until the base is just crispy and starting to brown.
Remove from oven, and top with arugula, pine nuts and the salt and pepper. Optional: drizzle with a little bit of balsamic glaze.
