These healthy beef burrito bowls are so easy to make, and a great alternative to take out burritos! Packed full of fresh veggies and protein, they are an absolute winner in our eyes!
Heat olive oil in a large fry pan over medium to high heat
Add onion and fry for 2 minutes until fragrant
Add garlic, mince beef and taco seasoning.
Fry mince until browned, then add kidney beans and tin of tomatoes. Simmer until kidney beans are tender and mince is cooked.
Meanwhile, mash the half avocado in a small bowl with a fork and season with salt and pepper.
Burrito Bowl Construction
Start with spinach at the bottom. Top spinach with minced meat, then the fresh tomatoes. Finally top with mashed avocado, sour cream, cheese and garnish with cilantro. Add a squeeze of lime for added freshness.
Notes
Ingredients need to be divided between two bowl. So each bowl should contain 5 tomato halves, 1 tablespoon of sour cream and cheese etc.
