An easy pizza using some of my favourite fall produce. This fall harvest pizza is perfect for your next date night or girls night in!

pizza base
¼
green apple
finely sliced

cup
arugula
3
pieces
prosciutto
½
cup
acorn squash
diced

tablespoon
dried cranberries
1
tablespoon
pine nuts
½
cup
gouda
grated

teaspoon
balsamic glaze

Instructions
Preheat oven to 400F/200C.
Dice squash and toss in olive oil and salted and pepper
Roast in oven 15 to 20 minutes until browned
Assemble pizza
Drizzle a little olive oil over the base.
Spread with half the cheese
Top with prosciutto, then add acorn squash and apple.
Sprinkle over pine nuts, cranberries and remaining cheese.
Bake in oven 15 to 20 minutes, or until the base is crispy and lightly browned
Top with arugula and a drizzle of balsamic glaze.
Notes
You can use any squash/pumpkin if you can't find acorn squash
