Orange Coconut Bliss Balls

Gooey, delicious, zesty and easy to make - our orange coconut bliss balls will be your next favourite snack!

Don't you just love those accidental recipes? That come about because a) you don't have the ingredients, or b) yeah nah... you don't have the right ingredients to make the recipe you set out to make!?

Well that happened to me the other day, and lo and behold, our new favourite emerged - orange coconut bliss balls.

Now let me tell you how this recipe was created! I set out on a Monday afternoon to make our week's snacks, hell-bent on making our mocha bliss balls, until I realised that I drink waaayyyyy too much coffee. Like, I'm drinking at least one espresso a day, one milked based espresso plus more! It is ridiculous how much coffee I've been consuming lately! So thinking that I needed to cut back on my coffee intake, I looked in my fridge to figure out what I could substitute! And there it was. A lone orange staring at me, begging to be put into my pending bliss balls! It was basically calling my name!

Now I am a HUGE fan of anything chocolate and orange, which is why I immediately knew this recipe would kick ass! The other problem I came across though, was that my supply of unsweetened cocoa was running low, which meant I had nothing to roll my bliss balls in! So again, put my thinking cap on, and discovered that if I rolled them in coconut, then I would have seriously hit a jack pot with our orange coconut bliss balls! The coconut just adds the perfect crunch to them, and makes them look oh so pretty!

And let me tell you - I wasn't disappointed! These orange coconut bliss balls are zesty, gooey, rich, easy to make and actually really healthy! Perfect for that mid afternoon snack when you're slumped across your office desk, wishing you could nap, but realising you've still got 2.5 hours of work left! You've all been there! Don't lie to me! The other great thing about this recipe, is that they will easily keep in the fridge or freeze! So even though they make 12 balls, you'll each have 6 snacks to enjoy during the week at work! And an extra on the weekend! #winning

Orange Coconut Bliss Balls

Zesty, gooey, full of chocolate and healthy! Our orange coconut bliss balls are the best!

Ingredients
 

  • ½ cup almonds
  • ½ cup walnuts
  • 12 medjool dates *
  • 1 teaspoon orange zest
  • 1 tablespoon orange juice
  • ¼ cup unsweetened cocoa
  • 1 tablespoon chia seeds
  • 1 tablespoon melted coconut oil
  • ⅓ cup shredded coconut for rolling
Prevent your screen from going dark

Instructions
 

  • Blitz almonds and walnuts in a high-powered blender until resemble a fine meal.
  • Add dates, orange zest and juice, cocoa, chia seeds and coconut oil and blend until well combined and resemble a dough.
  • Take a good teaspoon of dough and roll into bite size pieces.
  • Roll in shredded coconut.
  • Can be left in freezer or refrigerated

Notes

* if mixture is too dry add more dates, if mixture is too sticky try adding more almond or walnut meal.
