Delicious alert! I have had the biggest chocolate cravings later! Not sure if it's because it's been really cold, and all I feel like doing is devouring chocolate or drinking hot chocolates while being all cozy inside while it's raining, or because I have stumbled across some serious healthy 'caramel' inspo lately!

Either or, a no-bake salted caramel slice seemed like the perfect recipe to make!

With 3 months to go until our wedding, I have had the creative juices flowing, trying to find healthier alternatives to our favourite meal.

I finally bought a spiralizer, tried my hand at making cauliflower rice (with seemingly successful results, more on that later as well), made a kick-ass recipe for quinoa granola, went pescetarian, with amazing results, decided to start making healthier snacks (this is where this no-bake salted caramel slice comes into play), and attempted to work out more.

So far so good, minus the lack of working out.

It's amazing how, when you think about it, there are so many amazing healthier options for our favourite foods. Pasta has been replaced with zoodles, refined sugar with dates or honey, bleached flour with almond meal or oat flour, the list goes on.

Oh course nothing replaces being able to tuck into your favourite comfort food once in a while, but seriously, people have become so creative with healthy eating! And it's amazing how a few substitutes can make a world of difference.

With our no-bake salted caramel slice, the dates & maple syrup replace the typical sugar found in regular caramel, the condensed milk and biscuit base is replaced with coconut oil and almond meal, and the chocolate is replaced by a simple mix of coconut oil, maple syrup, and cocoa. And it is SO GOOD!

I'll admit it, it was hard having to stop myself from eating the salted caramel straight from the blender last time!

I had a play around with the best way to make these and in the end bar form one. I couldn't quite figure out how to make them sticky enough to roll into a ball. My original plan was to make the caramel into a ball, then coat it in chocolate, but I kinda ended up with half gooey, fallen apart caramel - not quite what I had planned.

So in the end, I figured I would make them into a slice, so that they were easier to eat!

These no-bake salted caramel tarts are gooey, chocolatey, not overly sweet, vegan, and refined sugar-free. They're also gluten-free! Winning!

So enjoy! And remember that there are plenty of other healthier options you can find to replace the foods you love! It's just a matter of being a little creative!

No-Bake Salted Caramel Slice

This no-bake salted caramel slice is oh so rich and delicious! Combing the power of dates for the caramel, cocoa, and maple syrup on a light and fluffy raw nut base, it will be love at first bite!

Ingredients
  

Base

  • 2 tablespoon maple syrup
  • ⅔ cup almond meal
  • ⅓ cup coconut flour
  • 2 tablespoon coconut oil melted

Salted Caramel

  • 1 ½ cups medjool dates pips removed
  • 1 tablespoon almond butter
  • 1 ½ teaspoon salt
  • ¼ cup cold water
  • 1 tablespoon maple syrup

Chocolate topping

  • 3 tablespoon cocoa
  • 2 tablespoon maple syrup
  • 4 tablespoon coconut oil melted
Prevent your screen from going dark

Instructions
 

Base

  • In a large bowl, combine almond meal, coconut flour, maple syrup, and coconut oil and stir until well combined.
  • Line a loaf pan with baking paper.
  • Spread out base onto baking paper, using hands to gently knead the base into an even layer.

Salted Caramel

  • Combine dates, water, almond butter, salt (start with 1 teaspoon) and maple syrup into a high powdered blender.
  • Blend for 5 + minutes, or until dates become blended and smooth. You shouldn't be able to see any chunks of dates.**
  • Keep tasting and adding salt according to taste.
  • Spread salted caramel evenly over the base.
  • Freeze until hard - about 30 minutes.

Chocolate Layer

  • Combine cocoa, maple syrup, and coconut oil in a small bowl.
  • Apply evenly to salted caramel layer using a spoon.
  • Cut slice into thin pieces and enjoy!

Notes

* I used about 1 ½ teaspoons of salt, but adjust according to taste as you go.
** Date caramel needs to be really well blended to avoid chunky pieces. The blender will heat up as it blends the dates, so eventually you will have a nice, smooth and delicious date caramel. It just takes time!

    A gooey soft centre, this raw caramel slice is a great treat for afternoon tea or play date. This recipe is easy to make an a great variation if you're looking for a refined sugar free snack.

    I have been on a chocolate kick lately too! It just sounds so good every night haha. Sounds like you have made some healthy swaps that are working well. And it is crazy how many healthy ways you can make your favorite foods now that still taste just as good!
