Lemon and Coconut Bliss Balls - a perfect balance of zestiness and sweentess, perfect for your afternoon kick!

Woop, another day, another post. I've been feeling a little unmotivated lately, so I decided to take a little break over the Easter weekend! And voila - feeling so refreshed, and excited to share some new recipes with you! The weather in Portland has been AMAZING the last few days! I can actually feel Summer starting to creep in which I'm so excited about! I swear in the last two years, we've basically gone from winter, to winter, to winter, to another winter! Mid 2014, we had an Australian winter, then we went to an American/Canadian winter in 2014/15 on our holiday, then we went back to an Australian Winter mid 2015, then went to an American winter AGAIN late 2015, early 2016! I am so fed up with Winter! I swear my skin is screeching for some Vitamin D!!! But on the plus side, we are going into Summer, then another Australian Summer when we go home for our wedding, then coming back in time for another American Summer! So I guess in the end it balances out! Summer and me are basically BFFs! I feel like Summer brings out this amazing burst of energy, motivation and revitalisation! I feel healthier, happier, swear to god I start to lose weight again, and my skin clears up so much! Summer brings fresh fruits, light meals like salads and fish and so many exciting things to look forward to, like camping trips, mountain bike season and day hikes! I'm so excited to also get the most out of Portland this summer, I feel like Portland thrives in the Summer time with all the amazing outdoor bars, food trucks and outdoor adventures!!

Summer just makes me so optimistic! I was in the supermarket the other day, and could not go past the HUGE stack of lemons in the veggie section! They were bright, bright yellow like the sun, and completely irresistable! Fun fact, in Australia, limes are more expensive than lemons! In America it is the opposite! The colour just reminded me of sipping on cold beers and cocktails and got me so pumped for the upcoming months! So I decided with all this renewed optimism, I'd make a beautiful recipe for lemon and coconut bliss balls. Lemon and coconut are practically the Brangelina of food - a match made in heaven, so I figured why not put the perfect combo of food together? These lemon & coconut bliss balls are sooooo amazing! It is literally like eating a zingy, lemon cheesecake (the hint is in soaking the cashews first)! I love putting in heaps of lemon, but it's up to you how much you do! Other bonuses of this recipe include the fact that these lemon & coconut bliss balls are refined sugar-free, raw, and VEGAN (we love doing vegan recipes!) So make sure you try them out asap, and enjoy (if you're state is sunny at the moment) the gorgeous sunshine!

Ps - You'll get about 15 bliss balls from this recipe, so we recommend storing these in an airtight container in the freezer and just grabbing them out whenever needed!

Lemon & Coconut Bliss Balls

Zesty, refined sugar free, vegan and easy to make, we are digging these lemon and coconut bliss balls for Summer!

Ingredients
 
 

  • 1 cup cashews - soaked 30-45 mins in water
  • 1 cup shredded/desiccated coconut
  • 1 tablespoon coconut oil optional, but helps to bind
  • 2 teaspoon lemon zest roughly zest of one lemon, use half if you want is less lemony
  • 2 teaspoon lemon juice roughly juice of one lemon
  • 2 tbs pure maple syrup
  • ¼ cup coconut for rolling
Prevent your screen from going dark

Instructions
 

  • Add cashews, desiccated coconut, zest and juice of lemon and maple syrup to food processor. Blitz until well combined.
  • Add coconut oil if using, and continue to blitz until nuts are all chopped up and mixture starts to form together easily.
  • Get a teaspoon of mixture and shape into a ball (they don't necessarily roll!)
  • Roll balls in coconut, and set aside in fridge for 30 minutes until set.
  • Enjoy now, or put into a container and place in freezer for the week

    If you don't like dates in your bliss balls then this recipe is for you. Light and zesty, these lemon bliss balls are a great afternoon treat.

    i was so curious about these because i feel like you rarely see bliss-balls that aren't brown from dates! Cashews sounds like a delicious alternative. Love how tropical these are 🙂

      Thanks for the love Beverley 🙂 Yeah I've found a lot with dates too, so did a bit of research and cashews seemed like the best alternative! I wonder if almonds would work too?! Thanks for commenting!
