Parsley Butter Potatoes

These parsley butter potatoes are yet another perfect side dish! Serve hot or cold, you've got a great recipe for any season!

But seriously.... Not joking. Especially when they are smothered in buttery goodness!

This recipe is so simple, I truly think anyone can make it. In fact, I don't even think it is worth writing out instructions are all because it is so simple.

  • boil potatoes
  • drain potatoes
  • add butter
  • add chopped parsley
  • season with salt and pepper
  • eat

Look at that shiny butter gleam!

Yep, that is literally it. So unless you're completely useless at boiling potatoes I actually can't see how you could go wrong!

I love a good potato recipe - potatoes aren't something we eat often, but occasionally if we find the perfect little potatoes, we make this. Mum has been making this recipe for years, and years and years at Christmas time, or for any special occasion actually.

Do your parents have recipes that they always cook for one particular occasion? Mine definitely do.

My Mum is the cook in our household, not that Dad can't cook, but I think he just makes too much mess for Mum to deal with! She is very particular about who uses her oven, Adam and I are the exceptions!

But going back to cooking on special occasions, Mum usually has her 'go to' dishes that she always used to cook when we were kids.

This includes these parsley butter potatoes, 'drippy salad', which was essentially a garden salad layered with peas, cheese tomatoes and mayonnaise, strawberry shortcake, truffles and a few other snacks and biscuits. I guess that's one part of Christmas traditions that I love. Knowing that when you get home, things are going to be familiar and homey like they should be.

Christmas is definitely my favorite holiday of the year for that particular reason - traditions. Whether it's the food or the fact that Christmas is the one time where we all get together as a family, Christmas is full of traditions that I'm sure we will pass down to our family and hopefully more generations to come!

These parsley butter potatoes are oozing with delicious butter and flavour! So simple, using only 3 simple ingredients, they will be your new favourite side!

Ingredients
 
 

  • 1.5 lbs baby potatoes
  • 2 tablespoon butter
  • ⅓ cup parsley finely chopped
  • ½ teaspoon salt
  • ½ teaspoon pepper
Prevent your screen from going dark

Instructions
 

  • Place potatoes in a large saucepan.
  • Cover with cold water.
  • Bring to boil, and boil for 30-35 minutes, or until cooked through but not mushy.
  • Drain potatoes.
  • Add butter, parsley and salt and pepper.
  • Stir until butter has melted.
  • Serve

Notes

Cooking time will vary depending on the size of your potatoes. Mine took about 32 minutes to fully cook.
