Red Onion - slice your red onion as finely as possible. If you have a mandolin, this would be a good way to slice them. I do not trust myself within an inch of a mandolin, so I opted to hand-slice them.

Easy Pickled Red Onions
Equipment
- 1 Small Size Saucepan
- 1 12oz/350ml jar with lid
- 1 Chopping Board
- 1 Knife
- 1 Measuring Jug
Ingredients
- 1 red onion very finely sliced
- ⅔ cup white wine vinegar
- ½ cup scant water
- 1 tablespoon white sugar
Instructions
- Finely slice the red onions as evenly as possible - using a knife or a mandolin.
- Place the white wine vinegar, water and sugar in a small saucepan.
- Bring to the boil, then reduce to medium heat and simmer for 5 minutes until the sugar dissolves.
- Turn the heat off.
- Add the red onions to the saucepan and stir, ensuring all of the onions are covered.
- Sit the onions in the vinegar for one hour, until cool.
- Pour into a clean jar and cool completely before refrigerating.
