Honey Mustard Potato Salad

This honey mustard potato salad is a light, fresh spring salad bringing together the best of fresh spring produce. This is a quick and easy potato salad recipe, that is perfect for weekend gatherings, backyard parties, potluck or outdoor picnics.

Who loves potato salad? Who loves creamy potato salad? Meh, me neither!

Seriously, I think there is something wrong with me, but I just can't get behind creamy potato salad! I'm all about fresh flavours in spring and summer, leave the mayo drained salads for comfort meals in winter!

Ok, maybe I don't hate creamy potato salad that much, but I definitely prefer fresh when it comes to making a kick-ass potato salad.

How versatile is potato salad though? Everyone in their life needs a solid potato salad recipe, and I'm here to provide! I love making potato salad for all occasions, whether it be just for dinner for Adam and me, backyard parties with friends, or to take on a picnic to the park. It's just an easy, likeable salad!

Today I teamed up with Toby's Family Food's to celebrate National Salad Month! I'm bringing you this honey mustard potato salad, using their honey mustard dressing. I've used Toby's dressing and dips before in this pulled pork nachos recipe and I absolutely love them! They're ultra creamy, super versatile and contain all natural ingredients that make you feel better about life!

The honey mustard dressing pairs beautifully with the freshness of the salad, and just adds an extra bit of tang to really tie the whole dish together.

About this Honey Mustard Potato Salad Recipe

For this honey mustard potato salad, I opted to use fresh herbs including dill and mint. I think they just add a bit of unique flavour to the salad. I feel like dill is a totally underrated herb, and I love incorporating it into dishes because it's so fresh and flavourful!

I also wanted to highlight the beautiful spring produce we are seeing at the moment and added fresh peas and arugula, because green is good right?

In terms of the potatoes, I love using the smallest potatoes I can find. At my local New Season Market, they have these gorgeous multicoloured potatoes called 'fingerling potatoes' and they are so sweet and delicious! Plus they look gorgeous!

For my Aussie friends, I'd use chat potatoes, like fingerling, they're a bit sweeter and easy to cook.

This spring honey mustard potato salad is the ideal salad for spring entertaining! Who can go past a light, fresh and healthy salad for the win!

Honey Mustard Potato Salad

A versatile salad that is great for weekend gatherings, spring entertaining, backyard parties, picnics or everyday weeknight dinners. This honey mustard potato salad is light, fresh and healthy incorporating some beautiful spring produce.

Ingredients
 

  • ½ lbs fingerling/chat/new potatoes or the smallest potatoes you can find
  • ¼ cup chives
  • 1 cup fresh peas or frozen, cooked and rinsed
  • 3 cups arugula
  • 1 tablespoon lemon juice
  • ¼ cup dill
  • ¼ cup mint
  • ⅓ cup Toby's Family Foods Honey Mustard Dressing

Instructions
 

Potatoes

  • Preheat oven to 400F/200C.
  • Halve potatoes and place in a baking tray lined with parchment paper. Toss in a dash of olive oil and some salt and pepper. 
  • Roast 25 minutes, or until crispy. Remove from oven and cool while you make the rest of the salad. 

Salad

  • Place arugula in a salad bowl. Add peas, half the herbs and the slightly cooled potatoes. 
  • Add lemon juice and honey mustard dressing. Garnish with remaining herbs.

    YES PLEASE to this! I love potato salad so much, especially when there's dill involved because nothing goes with potato like dill. I'm drooling over this!

    I love potato salads like this! I need to see if I can find Toby's dressings - my husband's favorite dressing is honey-mustard. This looks so fresh, spring-like, and healthy!!

      potato salad is so so good! if you can't find any, a simple mix of seeded mustard, honey, red wine vinegar and olive oil will work too!

    I noticed your blog on Aussie Food Bloggers and had to come over to say hi! Your blog is so well written and presented! I’m still learning and haven’t figured out the monetising yet. I love your recipes . Just wish I could get this dressing in Australia! My favourite potato salad roasts the potatoes first and I’m sure this dressing would go well with that too!

      Thanks for stopping by marcellina:) so happy you found me! roast potatoes in general are so darn delicious! any dressing really, but honey mustard is a favourite of mine! you could also whip together some seeded mustard, garlic, honey, olive oil and red wine vinegar to make a similar dressing!
