15 Minute Tuna Lemon Pasta

A healthy wholesome pasta, this tuna lemon pasta is fast, fresh and fabulous! 1 bowl, 1 saucepan, 15  minutes, this is a great weeknight meal for people on the go!

Happy Thursday!!

I've been meaning to post this recipe for one whole year, but for some reason just never really got around to it!

But we are finally here and I think you're going to love this quick, easy 15-minute tuna lemon pasta! I am making the most of lemon season at the moment and after the lemon cheesecake bars I posted on Tuesday, this tuna lemon pasta was next in line!

I had a day of cooking on Tuesday and it was actual bliss! Archie was in daycare, and I practically had the entire day to plan, cook and photograph recipes for you! Despite the ton of washing up that came with it, the day was so relaxing and fun!

The weather has been lovely lately, and it's starting to get my amped about summer! While I don't anticipate it to last, I'm going to make the most of it while I can! I'm trying to plan a ton of fun content that will get you excited about summer entertaining!

Last year I launched a meal plan section of the blog, and I am so hoping to take that further this year by providing you with some gorgeous menu ideas for spring and summer entertaining!

 But back to this tuna lemon pasta!

I love the changing of the seasons. Even though it's still cold (in my eyes) here at the moment, the smell of spring is in the air. I've started making lighter and fresher meal, making a move from having warming meals like soups and curries, to lighter, fresher foods like risotto and our tuna lemon pasta.

This lemon tuna pasta was originally adapted from Donna Hay and one that my Mum actually used to make ages ago when I was in high school. It was in one of her old cookbooks and I've only recently come back to it!

Why did I start making it? Pure laziness! Adam has been working away lately and I literally cannot be bothered cooking for myself when he is away!

That's why I turn to meals that I don't really have to put much thought into and don't really have to cook! This pasta recipe is so easy!

You throw the tuna, lemon, olive oil, parsley and red onion into a bowl and mix together, you cook some pasta, you mix em' all together and you got yourself a meal! Perfect for the lazy busy cook!

Minimal preparation, maximum tastiness! #winning #adulting.

This pasta comes together in under 15 minutes, and I guarantee it'll be the easiest pasta dish you'll make, that's not pasta and butter and ketchup. True story that was once my go-to pasta recipe when I was poor back in college. Spoiler alert, it's pretty rank!

15 Minute Tuna Lemon Pasta

This tuna lemon pasta is fantastic when you want something easy, quick and fuss free to make! A fresh, light pasta that is healthy and delicious! what more could you want!?

Ingredients
 
 

  • 4 oz fettuccine or you can use any other pasta
  • 2 ½ tablespoon lemon juice
  • ¼ red onion very finely sliced, approx. ¼-1/2 of a cup
  • 12 oz canned tuna in spring water
  • 2 tablespoon olive oil
  • ¼ cup parsley finely chopped
  • ½ teaspoon salt
  • ½ tsp pepper
  • parmesan cheese to serve
Prevent your screen from going dark

Instructions
 

  • Cook pasta according to packet instructions in lightly salted water (approx 8-12 minutes).
  • In a large bowl, combine the tuna, olive oil, lemon juice, parsley, red onion and season with salt and pepper.
  • Taste and adjust lemon juice, and salt and pepper according to taste.
  • Combine tuna with warm pasta.
  • Serve with a garnish of parsley.

Notes

This recipe feeds two hungry people, or 4 people who may want to indulge in dessert later!
Cooking time may vary for different types of pasta used.
PS - I made a discovery the other day- if you wanted to heat it up, add a dash of white wine! It's delicious!

    Superb! Really took 15min from start to finish! I added sliced olives, a pat of butter and loads of parmesan cheese to make it heartier. Simple and delicious dinner. 🙂
