It’s happening and I am totally on board with it!
I’ve been going through a bit of a granola phase lately. I’ve forgotten just how quick and easy it can be! Since getting Archie, morning have been a bit of a rush lately, so it’s so nice to have a quick, go to breakfast that I can throw together in less than 3 minutes. This chocolate granola is absolutely perfect! I love eating it with just a little almond and coconut milk, a little organic greek yoghurt and some fresh fruit! nom! It’s making me drool already!
This chocolate granola is the perfect balance between being just sweet enough without blowing your morning sugar load. I opted for using maple syrup and coconut sugar as my sweetness for this recipe. I love using more natural sugars on a day to day basis, leaving refined sugar for weekend treats, and I find using maple syrup and coconut sugar brings a really rich flavour to it, without going overboard on being too sweet!
And can we talk about this texture?
Honestly, crazy good! I LOVE crunchy granola and this is perfect! I used a combination of healthy nuts and seeds, shredded coconut and oats, and that, combined with the coconut oil kind of brings it together in perfect little chunks.
This chocolate granola is very different to my cinnamon and honey granola, and I think, a teeny tiny piece of me favours the chocolate granola over cinnamon honey (although they’re both good), but this chocolate granola is insane and just so, SO good!
The only problem is, right now my wisdom tooth is erupting and I can’t eat anything crunchy! Absolutely devastated. Do you find that you have a particular side of your mouth that you chew with? Well, my dominant chewing side is my right, which is where my wisdom tooth is coming up! Urgh, so painful! So I’ve been training my left side to get chewing! Haha, not really sure how a post about chocolate granola ended up with a chat about wisdom teeth! I think I’m just sad because I can’t eat all the food!

Quick and Easy Chocolate Granola
Ingredients
- 2 cups oats
- 1/2 cup almonds roughly chopped
- 1/2 cup coconut shredded
- 1/2 cup sunflower seeds
- 1/2 cup pepitas
- 3 tbsp raw cacoa
- 2 tbsp maple syrup
- 2 tbsp coconut oil melted
- 2 tbsp coconut sugar
Instructions
- Preheat oven to 300F/150C
- Combine all ingredients in a large bowl and stir until fully coated with coconut oil and maple syrup.
- Spread granola evenly onto a baking tray lined with parchment paper.
- Cook for 20-30 minutes, use a spatula to toss halfway through cooking to ensure it cooks evenly.
- Allow to cool (it gets crunchier as it cools)
- Store in an air-tight container and enjoy!

I am also off super hard and small foods that can get caught where I just pulled a tooth and I am also really missing granola. Yogurt just isn’t the same without that granola for texture! All the textures in this particular granola sound so nicely varied

There are days when chocolate for breakfast is just what you want, and coco pops just isn’t an option. So this is a wonderful idea, still with the goodness of the nuts and seeds, so less guilt. Would be delicious served with berries and yogurt.
I feel for you not being able to enjoy the food you want with the tooth problem, I do hope it improves quickly for you.

I love this chocolate granola! So good! It’s like eating dessert for breakfast! And the pictures have come up so well! Start doing warm saline rinses to help your erupting wisdom tooth :). They really help!
